The appellation is the source for a racy little chardonnay produced by Martin & Weyrich in Paso Robles. The 2004 Martin & Weyrich Jack Ranch Chardonnay ($15) is very crisp, with flavors of pear, lemon and just enough creaminess to add richness. Drink it with a piece of grilled halibut, any shellfish dish that isn't overly heavy or spaghetti with white clam sauce."
